1. Watermelon Pops

Watermelon wedgesWhat you’ll need:

  • Flavored salts
  • Freshly ground pepper
  • Local honey
  • Fresh lime juice
  • Ground red pepper
  • Schnapps

Directions:

  1. Cut a 1-inch slit into the rind of a just-cut watermelon wedge, and insert a wooden stick. Serve pops a variety of ways: Sprinkle with flavored salts and freshly ground pepper, drizzle with local honey and fresh lime juice, dust with red pepper, or add a splash of schnapps.

2. Watermelon Cooler

What you’ll need:

  • 1/3 cup water
  • 1 (6-oz.) can frozen limeade concentrate
  • 8 cups (1/2-inch) watermelon cubes*
  • 1 1/2 cups ginger ale

Directions:

  1.  Place watermelon cubes in a single layer in an extra-large zip-top plastic freezer bag, and freeze 8 hours. Let stand at room temperature 15 minutes.
  2.  Process half each of watermelon, ginger ale, water, and limeade concentrate in a blender until smooth; pour mixture into a pitcher. Repeat procedure with remaining half of ingredients; stir into pitcher, and serve immediately.
  3. *Honeydew Cooler: Substitute 8 cups (1/2-inch) honeydew melon cubes for watermelon cubes and 1 (6-oz.) can frozen lemonade concentrate for limeade concentrate; proceed as directed.

3. Sweet, Salty and Spicy Watermelon Refresher

What you’ll need:

  • 1 tablespoon turbinado sugar
  • 2 tablespoons fresh orange juice
  • 1 jalapeño or 2 serrano peppers, seeded and minced
  • 1/2 teaspoon sea or kosher salt
  • 1/4 teaspoon dried crushed red pepper
  • 1 small red onion, diced
  • 1/2 cup coarsely chopped fresh cilantro
  • 2 tablespoons coarsely chopped fresh mint
  • 1 small seedless watermelon
  • 1 small cantaloupe
  • 2 English cucumbers
  • 1 jicama
  • 2 mangoes
  • 1/4 cup fresh lime juice

Directions:

  1.  Combine lime juice and next 5 ingredients.
  2.  Place red onion, cilantro, and mint in a large bowl. Dice watermelon and cantaloupe into 1-inch pieces; add to bowl. Peel and dice cucumbers, jicama, and mangoes; add to bowl. Stir in lime juice mixture. Cover and chill 20 minutes. Add salt and pepper to taste.

4. Watermelon Agua Fresca

What you’ll need:

  • 4 cups cubed seedless watermelon, cantaloupe, or honeydew melon
  • 1/4 cup sugar
  • 2 cups cold water

Directions:

  1.  Process watermelon, cantaloupe, or honeydew melon and sugar in a blender until smooth, stopping to scrape down sides as needed. Pour mixture through a fine wire-mesh strainer into a pitcher, discarding solids. Stir in 2 cups cold water. Cover and chill until ready to serve. Serve over ice. Enjoy!

5. Watermelon Salsa

What you’ll need:

  • 1 cup diced unpeeled nectarine
  • 2 jalapeño peppers, seeded and minced
  • 1 tablespoon sugar
  • 3 tablespoons fresh lime juice
  • 2 teaspoons orange zest
  • 2 teaspoons grated fresh ginger
  • 2 cups seeded and diced watermelon
  • 1/2 cup chopped fresh cilantro
  • 1/3 cup diced red onion

Directions:

  1. Stir together first 6 ingredients in a large bowl; let stand 15 minutes. Add watermelon and next 2 ingredients, and gently toss to coat. Serve immediately, or cover and chill up to 24 hours. Enjoy!
