Mmmmm, the smell of pumpkin spice is in the air! That must mean fall is in full swing! There’s nothing quite like the relaxing, homey, spicy-sweet scent of cinnamon, cloves, nutmeg, and ginger. Spice up your fall camping trip with these pumpkin spice recipes!

Pumpkin Spice Recipes for Fall Camping

1. Pumpkin Spice Muddy Buddies

A delicious pumpkin twist on everyone’s favorite snack.

  • 4 cups Chex cereal (I like to mix 2 cups of rice and 2 cups of corn Chex)
  • 1 cup white chocolate chips
  • 1 tablespoon pumpkin pie spice
  • 1 cup powdered sugar

Instructions:

Place the Chex cereal in a large Ziploc bag and set aside. In a small pan, melt chocolate chips over low heat, stir in pumpkin spice. Pour melted chocolate over cereal and shake bag to evenly coat cereal. Add powdered sugar to cereal in a bag and shake again. Make sure all cereal is well coated with sugar.

Prep time: 15 minutes / Yields 4 servings

2. Pumpkin Spice Fig Bars

These are Vegan, egg-free, gluten-free, and trail-friendly!

  • 11/2 cups almond flour
  • 1 tbsp arrowroot starch
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 tsp cinnamon
  • 1 tsp allspice
  • 1 tsp nutmeg
  • 5 pitted dates (soaked until soft)
  • 1 cup pumpkin puree
  • 2 tsp vanilla extract
  • 2 tbsp coconut sugar (or add more dates)
  • 1/4 cup tahini
  • 5 figs, sliced, for topping

Instructions:

Preheat oven to 350F. Line a square baking dish with parchment paper. Combine all dry ingredients (except coconut sugar) in a bowl and whisk well to combine. In a food processor, blend dates until a soft paste forms, adding some of the soaking liquid if needed.

Add all other wet ingredients, and blend for two minutes until light and airy. Add the wet ingredients to the dry, and mix well until thoroughly combined. Spread the mixture into the baking dish, and top with sliced figs. Bake for 15-20 minutes until the top is golden brown, and the sides of the figs begin to curl.

3. Coffee

This deserves its own category, right? That’s what we thought too.

Make your own Pumpkin Spice “Coffee Bags”

Add 1tbsp of pumpkin spice mix to 1 cup coffee grounds. Divide and scoop into coffee filters and tie with a twist tie or dental floss (use the unflavored floss). Place in your camping mug and pour hot water over. Tada!

4. S’mores

Pumpkin Spice S’mores (These are s’mores flavored treats for home, not for campfires). Here are a few s’more treats that are for campfires.

These are the perfect treat to bake and share with friends and family.

  • 6 cups crispy rice cereal
  • 4 cups miniature marshmallows, (divided)
  • 3/4 cup sugar
  • 3/4 cup Karo® Syrup
  • 1 cup almond butter
  • 1 teaspoon pumpkin pie spice
  • 12 oz white chocolate chips
  • 5 tablespoons heavy whipping cream
  • 2 tablespoons Karo Syrup

Instructions:

Spray a 13×9-inch baking pan with cooking spray. Combine the crispy rice cereal and 2 cups of the miniature marshmallows in a large bowl. Set aside. Combine the sugar and the 3/4 cup Karo syrup in a medium saucepan. Bring to a boil over medium heat, stirring occasionally. Once at a boil, let it boil for one minute. Remove from the heat and stir in the almond butter and pumpkin pie spice until smooth. Pour over the cereal mixture and quickly stir to coat*.

Press evenly into the prepared pan. In a medium microwave-safe bowl, combine the white chocolate chips, cream, and 2 tablespoons Karo syrup. Cook on high in 10-15 second increments, stirring often until the chips are melted, and the mixture is smooth. Spread the mixture over the top of the cereal layer and top with the remaining 2 cups of marshmallows. Arrange a rack in the oven or broiler so the top of the pan is 4 inches from the source of heat. Preheat the broiler. Broil the bars just until the marshmallows are lightly browned, 10-30 seconds. Cool completely then cut into 2-inch squares.

*This mixture will set up quickly, so you’ll want to make sure you stir it together and transfer it to the cereal quickly before it is too hard to stir in.
